Red cabbage with round, tight, solid head. Ideal for coleslaw, pickling, cooked side dishes.
We recommend Polish red cabbage : Slice a red cabbage and an onion. Gently fry in a big pot about five minutes until softened. In a bowl, mix together 4 tablespoons red wine vinegar, 4 tablespoons brown sugar, 16 tablespoons water, and a little salt and pepper. Pour into the cabbage pot. We like to add a handful or two of sultanas at this point. Bring to the boil then simmer with the lid on for about ten-fifteen minutes until the cabbage is cooked how you like it. Refrigerates and freezes well.
